
Tonight, we made a new version of it out of desperation. Tomorrow is date night at the Trader Joes and we have slim pickins.
Heres how it goes:
1. Boil up some brown rice
2. While this cooks, dice cut some peaches
3 Dice up some onion and a tiny bit of jalapeno pepper.
4. Throw these items into the skillet with some lime juice.
5. While this cooks up, cut some long slices of green pepper and more onion- cold style and put into a salsa bowl for topping.
6. Now, throw some curry on top of the peaches and onions and jalapeno then add some black beans with water.
7. While this cooks up, toast your tortillas and melt some cheese.
Finally, add some hot tapatio hot sauce and serve up like the photo. Then add the cold toppings and chomp, chomp, chomp.
End with a dessert of beer sip and sliced apple and you are made in the shade ready to fart the night away while you sleep till morning.

Sounds way better than what I had imagined you had been eating every night for the past decade! I may try your deelish recipe one of these nights!
Beans and rice gets a bad rap, I tell ya! Gary Kantor does little to serve them justice- although beans out of a can with some hotsauce, not bad.
